Campbell’s Soup Beef Consommé Pepper Steak

One of my absolute favorite dishes ever is Pepper Steak. This was made often when we were kids and the Secret Sauce to this dish is Campbell’s Soup Beef Consommé.  The recipe literally takes 15-20 mins and only uses 4-5 ingredients. Beef 1 can of Campbell’s Soup Beef Consommé  1 Bell Pepper White rice (Optional) Sprinkle a few red pepper flakes on dish while simmering in pan    Super easy to make. I like to use thin top round steak and I cut it into strips myself because it’s cheaper but you can always buy the meat pre-sliced.  Add some cooking spray to the pan and add steak and some salt and pepper (more pepper) cook until brown.  Once the meat is browned the way you like add the bell pepper. I use a whole bell pepper sliced fajita style, this is my preference, you can really cut them however you like. Agua de Jamaica 🌺🌺

I am a lover of Agua de Jamaica so I decided to give it a try and make my own and let me tell you it was pretty easy to make and awfully delicious! Begin with 2 cups of soft hibiscus flower (Bought from the 99cents only store for $2.99) Add hibiscus flowers to 2 quarts of cold water.  The water has to be cold for this part of the process. I let it sit and seep for about 10 minutes. Transfer the concoction... flowers and liquid to a pot and bring  the water to a boil, once boiling reduce heat to low and allow to simmer for 10 minutes. Take off burner and  allow concentrate to cool. Once cooled the flowers  will sink to the bottom of the pot. That’s when you know it is ready to use. Pour the concentrate through a strainer to remove  the flowers. Add 2/3 cup of sugar and another 1 quart of cold water and stir. Add more or less sugar to your liking. HelloFresh Cheesy Smothered Mushroom Chicken with ingredients from the 99cents only store

I am addicted to going to the 99cents only store.  They have great deals and the produce is almost always stocked and fresh. I have been getting baby potatoes from there lately, red, purple and gold. These potatoes usually are between $3-$5 in the grocery store so I am definitely getting a deal for $1     I manage to always find crimini mushrooms and green onion for $1 each Also paid $1 for the fresh baby carrots. I had some left that I had been snacking on so I made sure to use them before they went bad I bought the chicken breast from Frys (Kroger) it was only $5.49 for 6 breast. I buy this often because it cooks quick and can be used for just about any entree like salads, pasta etc.  The purpose of this blog post is to show you that you don’t always have to spend big bucks to have a good meal. Roasted Butternut Squash Soup

Thinking of new and different foods to cook for fall? This is an easy inexpensive soup to make for fall. I made a small portion for myself and my daughter because it was my first time making this dish. This recipe made four small cups of soup. Believe it or not I bought this squash back on June 27 from GreenHouse Gardens a local farmers market. It wasn’t quite ripe, so I kept it in the veggie drawer in the fridge. By October it was perfect! First cut the squash into small cubes making sure to not include any seeds. Toss with kosher salt, pepper, and olive oil.  Cook for about 20-25 minutes on 325F. Let squash cool and sauté a quarter of a shallot and quarter of garlic clove. Then combine cooled squash, sautéed shallots and garlic and 1/2 cup vegetable broth into blender. Blend it until no pulp exists and it’s creamy. Then transfer to 1 quart pot and add another half cup of vegetable broth and a tablespoon of heavy cream.
